about the role:
- Oversee the full operations of the kitchen, ensuring that food quality, food costs, and staff costs are managed effectively.
- Menu creation and regularly update menus to reflect seasonality and current food trends.
- Ensure that all food is produced and presented to the highest standards, maintaining the club’s reputation for culinary excellence.
- Ensure that all kitchen activities align with the club's high standards.
- Creation of personal menus for private events and VIP guests.
- Oversee the catering for private events within the club, ensuring that all culinary offerings meet the club’s high standards and exceed members’ expectations.
- Manage the purchasing of produce within company guidelines and maintain stock control to ensure GP margins remain within the agreed budget. Ensure that the kitchen is stocked efficiently and that all produce is fresh and of the highest quality.
- Ensure that the kitchen is adequately staffed at all times, with rotas written according to business needs. Train and develop kitchen staff across all sections, ensuring flexibility and high performance within the team.
- Stay informed about industry trends, including new restaurant openings and food trends, to ensure the club remains at the forefront of culinary innovation.
- Manage the kitchen team.
- Maintain outstanding and consistent hygiene practices within the kitchen, adhering to cleaning rotas and standard procedures.
- Ensure that the kitchen operates in compliance with all health and safety regulations.
skills and experience required:
- Ability to create and regularly update menus.
- Good understanding of wine with good knowledge of food choices that goes well with them.
- Proven experience as a Head Chef or in a similar senior culinary role, preferably within a luxury or high-end establishment.
- Strong leadership skills with a passion for developing and mentoring kitchen staff.
- Excellent knowledge of food trends, seasonality, and modern culinary techniques.
- - Solid understanding of cost management, including food and labor costs.
- Ability to manage a high-performing kitchen team in a fast-paced, high-pressure environment.
- Commitment to maintaining the highest standards of food quality and hygiene.
